I had never heard of pancake day, until I was an exchange student in England. We also sang a Cat Steven’s song and I thought that was so cool, but later found out it was a hymn first!

Was that…”Morning has broken”? One of my all time favourites…never mind that it was a hymn, the words are lovely. I had it at my first wedding, and honestly, it was one of the best things about that marriage…apart from my lovely daughter, of course! I still love it now( and my lovely daughter,of course!)

I never thought of serving pancakes that way–I will have to try that! In the States we usually top pancakes with fruit preserves or maple syrup (the good stuff, not the fake kind!) and a little butter.
